Do you have a habit of eating the same lunches day in and day out? Does it consist of a lot of bread?

Well despite what your habits are, how about including some new tasty recipes to the menu.

I’ve gathered a selection from the archives to give you some new healthy lunch inspiration.

I’d have to say I am a HUGE fan of my daily salads (well, most days at least). But salads don’t have to be boring and tasteless – they can be full of all sorts of delicious, nutritious ingredients.

Walnut Beetroot Feta Salad

A delicious combination of sweet pan roasted beetroot with walnuts and spicy arugula (rocket) makes the perfect salad combo. If you’ve never had pan roasted beetroot you are going to love it. Beetroot (and beet leaves) is full of antioxidants, along with plentiful amounts of vitamins and minerals.

2. Pumpkin Chicken Morroccan Salad

A mildly spiced Morrocan infusion topped with a tahini (sesame paste) dressing.

3. Mediterranean Bean Salad

A vegetarian salad packed with beans and fetta for plenty of healthy protein. The great thing about eating beans is they are a slow release carb and provide bountiful amounts of soluble fiber that keeps you full for hours on end.

4. Canned Salmon Salad

Canned salmon with bones is jam packed with non-dairy calcium, even more than dairy products. It also contains loads of omega 3 fatty acids, which rapidly help relieve inflammation and support a healthy immune system.

5. Honey Mustard Chicken Broccoli Salad

A simple dish with lots of flavor.

6. Chicken Veggie Pesto Salad

In my house we love to make a homemade pesto and this chicken pesto veggie salad has long been a family favorite. On occasion I’ll also add a little brown rice pasta to the mix. But more often than not, the big salad bowl gets loaded with a mixed array of veggies.

7. Chicken Lettuce Burrito

Skip the carb loaded burrito bread and try wrapping your burrito mix in crispy fresh lettuce leaves. It really does work wonders.

    These are such great salad ideas Jedha! I try to eat salad every day, but it can get boring because I use the same ingredients all the time. I will definitely try using canned salmon, and your beetroot salad looks super yummy too. Thanks for sharing these cool salad ideas 🙂
