When it comes to anti-inflammatory meals, sure there’s a lot of things that matter, but there is one key thing to remember – EAT MORE VEGGIES!

Veggies are the most nutrient dense foods with have and provide us with massive anti-inflammatory power. So put these lot of meal ideas to the test and see if you can add more variety to your life!

1. Pan Fried Chicken Breast and Sauteed Beet Greens

Pan frying chicken breast has got to be one of the easiest ways to cook chicken and one of the most tasty too. Simplicity is often best, wouldn’t you agree?

Cooking beet greens is not something that is very common. They are something that often gets thrown in the bin or compost. But they can be eaten and they are a tasty green and they are also free.

Surprisingly beet greens are really tasty! My husband is not really a big fan of greens, yours might be the same. Sure he does eat them but not in great quantities. BUT he actually served himself two extra serves when I made these simple sauteed beet greens!

2. Kale and Tomato Egg Muffins

Egg muffins make a great grab and go breakfast that can be made ahead of time and eaten on the go, hot or cold. This makes them great for traveling, as a carry around snack or lunch box item, and they store well in the fridge for up to 5 days, so cook up a big batch and they will keep you going all week long.

3. Chicken Burrito

Sugar free, dairy free, gluten free and delicious! Using lettuce leaves in place of the burrito bread makes this fresh and revitalizing.

4. Pesto Pan Fried Fish with Veggies

A simple pan fried fish recipe using homemade pesto that takes just 10 minutes to whip up and can be eaten for lunch or dinner. My husband loves it but enjoys a few more carbs so I give him a bit of gluten free pasta with pesto on the side and a sprinkle of cheese and that keeps him more satisfied than simply eating it with the veggies.

5. Chicken pesto veggie salad

One of my all time favorites (and my daughters) that makes a great lunch or dinner and the perfect addition for any gathering.

6. Marinated Chicken Drumsticks with Sundried Tomato Salad

The great thing about chicken drumsticks is they’re cost effective. Cook up a big batch and keep them handy for one meal or more. Actually, I like doing that with my meal planning – cook once, eat twice or three times!

7. Chili Beef and Beans (Crockpot easy meal)

Beef is not something you want to eat every day, but once or twice a week it can make a good addition to your diet. The good thing is it fills you up more than other meats, and if you’re a guy, I’m sure you love your red meat. I know my partner does!
