I’ve been sharing my daily food log in a visual form so you can get a look into my life for a little. Sometimes it’s more exciting than this but at the moment I’m pretty busy. Still, none of us eat glamourous meals every day right? So at least it reveals how easy and simple I like to keep things sometimes 🙂Day 4
Breakfast was some porridge topped with tahini, greek yoghurt and flaxseed meal. I used oats this time but sometimes I make a paleo grain free porridge too.
Lunch was some pan fried chicken and salad. Butter in a skillet or pan, throw in the chicken and squeeze some lemon over. So simple but just tastes great.
Dinner doesn’t look to stunning but filled the gap. Some sausages and greens – kale, broccoli and beans cooked with onion and some diced tomato.
A fast getaway requires a fast breakfast. Cook the eggs while in the shower and coat some brown rice cakes with butter and you’ve got a great breakfast 🙂
I also often just eat the eggs on their own.
Lunch was some ground beef fried rice. I used to make fried rice filled with mostly brown rice and not too many veggies. Now I pack the veggies and meats in then just add a little carb filler. Makes a great lunch if you’ve got lots of activity to do like I did out in the garden 🙂

Dinner was a chicken and veggie salad coated in homemade pesto. Delicious!
Chicken, kale and veggie frittata for breakfast. I coat it with cheese for my hubby 🙂
You know I often try to eat more carbs at breakfast or lunch because I find it does help sustain my energy more. A baked potato served with salad and the potato ended up with butter and cottage cheese on it, just to finish it off nicely.
Dinner, trusty salmon cakes and salad.
As you can see my salads have been pretty average and boring lately. I’ve been so busy with my Masters thesis that spending time being creative in the kitchen is not really on my agenda right now. As you can see, you’re getting the brunt of it all. But let’s face it, none of us are creative all the time right?!
