This gluten free banana bread is pretty simple to whip up. It’s great for an afternoon tea if you’re having guests over. The kids will love it to include in their lunches. And although it’s not an everyday weight loss inclusion, it’s still a great one to keep available in the recipe bank. It is sugar free but does contain a little honey and some dried fruit for sweetening 🙂
Gluten Free Banana Bread Recipe
Yummo, doesn’t it look delicious! Just be careful not to cook it too often or you might find yourself overindulging in this one 🙂
Serves: generous loaf
- 3/4 cup coconut flour
- 1 teaspoon baking powder
- Pinch salt
- 1.5 large bananas or 2 small bananas – mash in a bowl with a fork
- 8 eggs
- 1/2 cup coconut cream
- 1 tablespoon honey
- 1/2 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1/4 cup chopped walnuts
- 1/2 cup sliced dates
- Preheat oven to 340°F (170°C)
- Place coconut flour, baking powder and salt in a bowl and whisk together until most lumps are removed (you can skip this step if really pushed for time and just put it all in the food processor)
- In a food processor, put mashed banana, eggs, coconut cream, honey, vanilla & cinnamon
- Process on low until well combined, it should make a fairly thick batter like mixture
- Remove the center piece from the processor and using a spoon mix the walnuts & dates through the mix until well combined
- Grease a loaf tin by pouring a small amount of oil into the pan, then use a paper towel to wipe it around the pan. Using a non stick pan is best but still grease anyway
- Pour the banana batter into the pan and gently spread out evenly
- Bake for 50-60 minutes or until golden brown
- Cool in pan for 10 minutes, then remove from pan & continue to cool on a wire rack. Serve a couple of slices for a satisfying meal.

I don’t think I’ve ever had all the ingredients on hand to make a recipe on the same day I read it; except for this time…I decided to make it then and there and was really happy with the results. You’re right though, Jedha, I’d better think of this one as a special treat – type recipe 🙂 It would be way too easy to have this every morning with a nice cup of tea or coffee!
